Cantina della Volta is all about craftsmanship and vision. Christian Bellei has turned the humble Lambrusco di Sorbara in one of Italy’s finest Metodo Classico Sparkling wines. His attention to details and infinite passion for the Champagne Method are also expressed by the “Il Mattaglio” wines, based on organic certified Chardonnay and Pinot Noir grown amidst the hills south of Modena. Christian’s unique approach delivers single-vintage, elegant and incredibly delicious wines, built on the purity of varietal character and capable of unmatched versatility on the table.
All the Lambruscos are 100% Lambrusco di Sorbara from rented or managed vineyards owned by farmers that have worked with Christian and his Family for generations. Using exclusively the Sorbara Lambrusco is a key factor for Christian, as it is the lightest in color and highest in acids in the Lambrusco Family, critical features to make Metodo Classicos that are elegant, clean, vibrant and long lived.
The “Il Mattaglio” wines are based on Chardonnay and Pinot Noir from certified organic estate vineyards, planted south of Modena at 600 mt elevation by Christian’s father using clones purchased in Champagne. These wines are a testament to the Bellei’s family commitment and passion for the Champenois Method, and are refined, delicious bottles that can rival Champagne in quality and longevity.

"La Volta" Lambrusco di Sorbara PetNat
100% Lambrusco di Sorbara, the only one produced with the PetNat or Ancestrale Method. The wine starts the fermentation in stainless steel after a brief maceration with the skins, and ends it in bottle. It is then disgorged, and closed with a crown cap. This is a deliciously bright, savory, light sparkler with loads of currant and raspberry aromas, framed by hints of fresh herbs.

"BrutRosso" Lambrusco di Sorbara DOC Brut Metodo Classico
100% Lambrusco di Sorbara, interpreted with the Classic/Champagne Method. Immediately after harvest, the grapes are manually loaded on a Vaslin press, the pressed juice is fermented in stainless steel vats and aged for 6 months. Second fermentation in bottle with Champagne yeasts. Loaded with aromas of raspberry and wild berry and a touch of citrus peel. At least 36 months on the lees, 5.5 g/l dosage. This is an incredibly versatile wine, all the flavors of Lambrusco and all the elegance and balance of Metodo Classico.

100% Lambrusco di Sorbara, interpreted as an elegant and delicious Brut Rose. Notes of currant, raspberry and rose petals, backed by a lingering, refreshing perlage. Vintage dated with at least 42 month of aging on the lees. Dosage 5.5 g/L.

A “Blanc de Noirs” made from 100% Lambrusco di Sorbara. The best expression of Christian Bellei’s creativity, offering nuanced wild berry aromas and notes of lemon peel. Super persistent. Vintage dated, with at least 36 months of aging on the lees. Dosage 3 g/L.

"La Prima Volta" Lambrusco di Sorbara Rose Metodo Classico Zero Dosage VSQ
100% Lambrusco di Sorbara, aged at least 36 months “sur lie”. Vintage dated. No dosage, only base wine is used to top off the bottle after disgorgement. An incredibly ethereal, nuanced Lambrusco, combining structure and primary wild berry aromas with a vibrant backbone.

"Il Mattaglio" Metodo Classico Zero Dosage VSQ
57% Chardonnay and 43% Pinot Noir from organic certified estate vineyards in Riccò di Serramazzoni, south of Modena in the midst of the Apennines, at almost 600 mt elevation. The two varieties are picked and fermented separately, aged on the lees in stainless steel tanks for 6 months, and then blended before being bottled for the second fermentation with selected yeasts. Aged at least 36 months on the fine lees, before disgorgement. This is a full-bodied and complex sparkling that can take on the most daring of the food pairings. Notes of ripe yellow stone fruit wrapped in a tight, vibrant finish.

"Il Mattaglio" Brut Rose VSQ
63% Pinot Noir and 37% Chardonnay from organic certified estate vineyards in Riccò di Serramazzoni, south of Modena in the midst of the Apennines, at almost 600 mt elevation. The two varieties are picked and fermented separately, and then blended to achieve a gorgeous Salmon pink color and aged at least 42 months on the fine lees. Complexity and elegance are perfectly balanced, for a sparkling rose that shows enticing notes of wild cherries and ripe peach marmalade. Makes an amazing Italian aperitivo, but it shines with shrimp tempura, lobster bisque and hamachi crudo.
